Chinese Garlic Sauce Recipe
Ingredients
- Garlic
Seasoning
- Plant oil
- Sesame oil
- Salt
- Sugar
- Onions, shredded
- Stalk scallion, stalk part only, shredded.
- The five spices (1 piece of cinnamon, 2 pieces of anise, and 2 pieces of geranium.) They are not necessaries, but they do add fragrance to the Garlic Sauce.
Cooking steps
- Peel and wash the garlic and blend it thoroughly by an ingredient blender.
- Add plant oil into the stir-frying pan, then add onions, stalk scallions, and the five spices, stir-fry on a slow fire.
- Once the fragrance is smelled, the five spices shall be taken out from the pan firstly to avoid over-cooking, causing a bitter taste.
- Continue to stir-fry the remaining onions and stalk scallions in the pan until they are turning brown, which is the very time for an immediate fire-turn-off. Remove them from the pan.
- The chopped garlic is about to perform its shown after the removal of onions and stalk scallions. Bear the rule of slow fire and non-stop stirring in mind, as anything over cook would lead to bitter taste, and ruin the whole dish.
- Probably you would sniff the flattering smell of garlic in a while. Congratulations! That is the hint of success. It is about the time to add salt and sugar for seasoning, and some sesame oil to enrich the fragrance of the Chinese Garlic Sauce.
- Just another 10-20 seconds stir-frying after the seasoning session, to help them mix nicely. An utmost authentic Chinese Garlic Sauce is then ready in front of you!
